Kale–It’s Not Just a Garnish

How many times have you heard, Kale is a Nutritional Powerhouse?!  Lots!  In fact, quoting text found at the WebMD.com, “Kale, also known as borecole, is one of the healthiest vegetables on the planet.”

Wow–the planet?!  That’s quite a statement and here’s why–

One cup of kale contains:

    1. 36 calories
    2. 5 grams of fiber
    3. 15% daily requirement of calcium and vitamin B6
    4. 40% of magnesium
    5. 180% of vitamin A
    6. 200% of vitamin C
    7. 1,020% of vitamin K
    8. Good source of–minerals copper, potassium, iron, manganese and phosphorous

There are a number of easy ways to incorporate this amazing vegetable into your diet.  One of my favorite recipes is Shredded Kale with Lemon and Parmesan, found on the Weight Watchers website.  So easy and so good!  I’ve shared this recipe with a few friends and all who tried it, really liked it.  Maybe you will too.

Note–Since vitamin K is known to interfere with certain medications, check with your doctor if you think this may apply to you.
